Cashew Barfi

Cashew Barfi (also known as Kaju Katli , literally “cashew slice”) is an Indian dessert which is found in any cultural Indian festives ✨. Different famous varities of barfi include besan barfi (made with gram flour), pista barfi (made with ground pistachios), chocolate barfi, sing barfi (made using peanuts) , barfi enhanced with fruits (such as mango or coconut) and so on.
Barfis are usually coated with edible silver (vark) and served at events. This sweet is usually consumed during holidays, wedding events and often served during Diwali and also Eid.
So lets go on with this sweet recipe.

Ingredients
1 ½ cup Cashew nut
½ cup water
¾ cup sugar
¼ tsp cardamom powder
2 tbsp ghee
Method
Grind (basically whisk ) the cashew nuts to fine powder and keep it aside.
On two baking sheets, grease it with ghee and set aside.
In a large pan , add water and sugar (medium flame) and let the sugar dissolve in water and boil a bit .
Add the cashew nut powder (low flame) and stir it continuously till there is no lumps.(its a time consuming procedure)
Add ghee , at intervals, and mix well .
NOTE : Stir the cashew nut powder in low flame 🔥 – this is to avoid lumps and the cashew from burning.
Once the cashew paste become thick and doesn’t stick to the sides of the pan – off the flame and pour the contents to one of the greased baking sheet (pour on the greased side)
Cover the cashew paste with the other greased sheet (greased side on top of the cashew contents)
Using a rolling pin , flatten the cashew paste – then cut to your diamonds shapes (Remember all of this has to be done when the paste is hot , as it hardens when it cools). Your barfi is ready to be served.
