Chili Garlic Paratha

Paratha is a layered flatbread made with flour, water and ghee. This is basically a fried dough food. Parathas are the most popular flatbread in Indian Subcontinent. Traditionally , ghee is used for cooking parathas but oil too can be used.

Chili garlic Paratha is a desi version of the normal garlic bread. This is a delicious meal for breakfast, lunch or dinner – simple, healthy and easy to make. You can also make aloo (potato) parathas , paneer parathas, vegetable parathas and so on.

Ingredients (For 4 parathas)


For dough :

  • 1 ½ cup whole wheat flour

  • ¼ tsp salt

  • ¾ cup water

For filling :

  • few garlic cloves (chopped to tiny bits)

  • 3 tbsp desi ghee

  • ½ tsp salt

  • 2 green chilly (chopped to bits)

  • handful coriander leaves (chopped to fine bits)

Extra ghee and wheat flour as needed

Method

  • In a large dry bowl , add whole wheat flour , ¼ tsp salt and pour water – little by little. Each time you add water , do mix it well with the flour till you get a soft dough. Knead the dough well and transfer the dough to the bowl then coat the dough with a bit of ghee and set it aside.

  • To make the filling, in a bowl add garlic bits, ½ tsp salt, green chili bits, coriander leave bits and ghee. Mix well and your filling is ready.

  • Now divide the dough to equal 4 round dough balls.

  • Place a dough ball on board surface and coat it with wheat flour. Using a rolling pin , roll it on the dough to obtain a circular thin dough.

  • Take a spoon of the filling and spread on one side of the flat dough surface . Using a pizza cutter or knife, create strips on the dough (side with the filling). Leave (almost 1 cm) from left and then create strips horizontally from that point to the end.

  • Now roll the dough towards you and stretch the dough a little bit. Create a small spiral with the dough and tuck in the end of the dough underneath the dough . Pour a bit of ghee on the spiral dough and set aside. Roll the spiraled dough using rolling pin to your paratha size and set it aside.

  • Repeat step 4 onward for the rest of the dough balls.

  • In a heated pan , pour little ghee and cook the parathas (both sides). When the paratha is cooked, transfer them to serving and bit the paratha to get the layers and serve it.
