Spanish Omelette

Spanish Omelette (also known as Spanish Tortilla) is a traditional dish and also one of the signature dishes in the Spanish cuisine. The main ingredients for this omelette are eggs and potatoes.
The best way to serve a this dish is to slice it like a cake. It is also served as a light lunch with fresh bread and a salad.

Ingredients (Servings for 6 people)
6 eggs
1 whole onion chopped
2 whole potatoes chopped (not thin nor thick - the right size)
Salt to taste
Optional : You may add grated carrots or any veggies of your choice or even add cheese.
Method
Pour olive oil to a fry pan and add the chopped onions and chopped potatoes into the pan.
The potatoes and onions should be fried well in the pan , that is, till they are caramelized properly (meaning golden brown). You need to fry them for 10 - 15 minutes and remember to stir them.
Beat the eggs in another bowl and set aside.
Drain the oil from the fried potatoes and onions and add it to the egg bowl. Remember to season the eggs with salt . Give a little mix (Do not whisk ), cover it and let it rest for 15 minutes. This is for the potatoes to soak in the eggs mix.
Now pour the whole mixture on a non stick pan (you may grease the pan with oil if you want ) . Set the flame heat high for 1 minute and then at low flame for 2 minutes.
Check and release the sides and then take a plate (Plate need to be wider than the pan), cover the pan, apply a bit pressure on the plate and flip the pan. Your omelette is ready in only one side
Now push the omelette to the non stick pan (remember to push it to the end of the pan ) and slide slowly. Then set the flame heat high for 1 minute and then at low flame for 2 minutes. Off the flame and your omelette dish is ready to be served .
